Ingredients
  • 12 frozen round waffles
  • 6 large eggs
  • 1 Tablespoon vegetable oil
  • 1 18 oz package Jimmy Dean Sausage Skillets
TOPPINGS:
  • Shredded cheddar cheese
  • Chopped tomatoes
  • Sliced green onions
  • Sour cream

Instructions
  1. Move oven rack to the middle position and preheat to 400 degrees F. Place 6 waffles on a microwave safe plate and cook on high for 45 seconds, or until the waffles are warm and pliable. Repeat with the remaining 6 waffles.

  2. Fold one waffle into a taco shape and use 2 toothpicks to secure the waffle in place, leaving a good amount of space for the waffle to be filled. Place the waffle on an ungreased baking sheet and repeat with the remaining waffles.

  3. Bake the waffles for 7-8 minutes or until they are crisp and hold their shape. Remove the toothpicks and set aside.

  4. In a medium bowl add the eggs and whisk until combined and set aside.

  5. Add the vegetable oil to a large 12-inch non-stick skillet and turn the heat to medium. Once the oil is shimmering, pour in the contents of the Jimmy Dean Sausage Skillets pouch into the pan. Cook over medium heat for 10 minutes, stirring occasionally.

  6. Pour the beaten eggs evenly over the sausage mixture and cook, while stirring occasionally, for 3-4 minutes or until the eggs are set.

  7. Spoon the sausage skillet into the waffles and top with shredded cheese, chopped tomatoes, sliced green onions, and/or sour cream (all optional). Serve.

  • When I serve these tacos for breakfast I make the waffle taco shells the night before. That way all I have to do is whip up the Jimmy Dean Sausage Skillets while I’m making school lunches in the morning, and I can get breakfast on the table in no time!
  • Leftover taco shells can be stored in an airtight container or zip-top bag for up to 2 days. When you serve them again just briefly warm them in the microwave before adding the filling.
  • Leftover egg and sausage skillet mixture can be kept in an airtight container in the refrigerator for up to 2 days.

EGG BOATS (BREAKFAST FOR DINNER)

INGREDIENTS
  • 4 sandwich or small sub rolls
  • Filing:
  • 6 large eggs
  • ⅓ cup heavy cream
  • 1 tsp salt
  • ¼ tsp pepper
  • 1 tbs each green bell pepper and red bell pepper
  • 2 finely chopped green onions -OR- 2 tbs finely chopped red onion
  • 4 strips crisp-cooked bacon, crumbled
  • ½ cup shredded cheddar cheese (see NOTES)





  • ••••ENJOY BREAKFAST 
  • ••••FOR DINNER!!
NSTRUCTIONS
  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment or foil.
  2. Cut a slit in the center top of each roll. Hollow out, leaving about ½-inch for a "wall."
  3. Whisk eggs and cream in a medium bowl. Add the rest of the filling ingredients and stir well to combine.
  4. Divide egg mixture evenly between the rolls.
  5. Bake for 25-30 minutes or until eggs are just set. Let stand for 5 minutes before serving. If you prefer firmer eggs, then you can microwave on high for about 30 seconds after the standing time.
NOTES
Swiss cheese, gouda and fontina are good substitutes.

Canned Caramel



This little recipe always slips my mind when I'm looking for an easy dessert.  All you have to do is submerge a can of sweetened condensed milk in water and cook at what I would call a vigorous simmer for three hours.  (this recipe has failed me once and I don't know why, it came out a tepid blond color.) Alternatively, you could cover this pot of water throw it in 350˚ F oven for three hours. Once it's done, allow it to cool for around 30 minutes before opening.**

The result is a silky, perfectly sweetened, dulce de leche.  Spread this on a wafer cookie with a tiny pinch of sea salt and you have an amazing dessert.

**NOTE: Do not just drop a room temp. can of condensed milk into an already-boiling pot of water - the temperature contrast could cause the can to burst.  and DO NOT boil a can and return it to your cabinet for few months - once cooked I would not consider this a shelf stable product.
