Two Ways to Brine

Wet Brine

Two-Ways-To-Brine-Turkey

In large stockpot, mix 2 gallons cold water and 2 cups coarse kosher salt.

Add turkey; brine should cover the bird. Cover and refrigerate 8-12 hours.

Remove turkey from brine; rinse under cool water, rubbing inside and out to release salt.

Pat dry with paper towels.

Pat turkey dry with paper towels.

Sprinkle 2 tablespoons coarse kosher salt inside the cavity.

Generously salt the outside of the turkey (up to 1 cup).

Transfer to baking sheet and loosely cover with foil. Refrigerate for 12-24 hours, removing foil for last 2 hours.

Foolproof Turkey Gravy

Pour out turkey drippings, reserving 1/4 cup and the brown bits in the pan.

Sprinkle in 1/4 cup flour and cook on medium heat.

Stir constantly until mixture is smooth and bubbling.

Pour in 2 cups broth and heat to simmering, stirring constantly. Let bubble for 1 minute.

    medium sweet potatoes or yams (2 pounds)
    1/3
    cup packed brown sugar

    tablespoons butter or margarine

    tablespoons water 
    1/2
    teaspoon salt

    Directions 

    • 1 Scrub sweet potatoes, but do not peel. Place potatoes in 3-quart saucepan. Add enough water just to cover. Heat to boiling; reduce heat to low. Cover and simmer 20 to 25 minutes or until tender. Drain; cool slightly. Slip off skins. Cut into 1/2-inch slices.
    • 2 Heat remaining ingredients in 10-inch skillet over medium heat, stirring constantly, until smooth and bubbly. Add potatoes. Gently stir until glazed and hot.

    cups frozen mixed vegetables

    tablespoons Gold Medal™ all-purpose flour

    cup Progresso™ chicken broth (from 32-oz carton)

    cups diced cooked chicken breast

    tablespoons heavy whipping cream
    1
    teaspoon salt
    1
    teaspoon pepper 
    1
    box Pillsbury™ refrigerated pie crusts, softened as directed on box

    Directions 

    • 1 Heat oven to 400°F.
    • 2 In 2-quart saucepan, melt butter over medium heat. Stir in frozen vegetables; cook 3 minutes. Sprinkle flour over vegetables; stir well. Cook 1 minute.
    • 3 Beat broth into vegetable mixture with whisk; cook over medium-high heat, beating constantly, 2 to 3 minutes or until thickened.
    • 4 Stir in chicken, whipping cream, salt and pepper; continue cooking 2 minutes. Remove from heat; cool 10 minutes.
    • 5 Meanwhile, unroll crusts on work surface; lightly roll crusts to make slightly larger. Cut 5-inch diameter circles in crust, reserving scraps to reroll to cut a total of 8 circles. Place on 2 ungreased large cookie sheets.
    • 6 Spoon 2 to 3 tablespoons chicken filling into each crust; fold over. Press with fork to seal.
    • 7 Bake about 15 minutes or until golden brown.

    Classic Cranberry Sauce

    Rinse 12 ounces (about 3 1/2 cups) cranberries.

    Bring 2 cups sugar and 2 cups water to a boil.

    Add cranberries and boil for 5 minutes.

    Stir until cranberries start to pop. Cover and refrigerate for 3 hours.

    Fix a Gravy In Trouble

    Greasy?

    Place a slice of fresh bread on top of the fat for a few seconds to absorb it; remove bread before it breaks into pieces. 

    Lumpy?

    Pour into food processor and process until smooth, or press gravy through a strainer; return to saucepan and heat.

    Too thin?

    Dissolve 1 tablespoon flour in 2 tablespoon water; stir into gravy with fork or wire whisk. Boil and stir 1 minute.

    Too pale?

    Stir in browning sauce, soy sauce or Worcestershire sauce in color (start with 1 teaspoon).

    Too salty?

    Add a raw peeled potato, cut into 
    eighths; cook and stir 5 to 10 minutes, then remove potato pieces.
