••••BLACKBERRY MOJITO!!

INGREDIENTS

  • 1/2 c. blackberries
  • handful fresh mint leaves
  • Juice of 2 limes
  • 1 tsp. sugar
  • 1/2 c. light rum
  • Crushed ice
  • club soda

DIRECTIONS

  1. In a small bowl, muddle blackberries. Set aside.
  2. Place mint leaves in bottom of glasses. Divide and spoon blackberry mixture on top.
  3. Add rum, sugar, and lime juice and stir to combine. Top with crushed ice.
  4. Add club soda and garnish with mint leaves and more blackberries.

INGREDIENTS

  • 1 1/2 lb. shrimp, peeled and deveined
  • 1/3 c. mayonnaise
  • 1 stalk celery, finely chopped
  • 2 scallions, thinly sliced
  • Juice of 1 lemon
  • 2 tbsp. chopped dill
  • kosher salt
  • Freshly ground black pepper
  • 1/2 tsp. Old Bay seasoning
  • 2 tbsp. melted butter
  • 6 long potato rolls, split open
  • 1 c. crushed potato chips

DIRECTIONS

  1. Bring a large pot of salted water to a boil. Add shrimp and boil until pink and cooked through, about 2-3 minutes. Drain immediately and rinse with cold water to cool the shrimp. Chop into bite-size pieces.
  2. In a medium bowl, toss shrimp with mayonnaise, celery, scallions, lemon juice and dill. Mix until thoroughly combined. Season to taste with salt and pepper.
  3. Brush inside of potato rolls with melted butter. Distribute shrimp mixture evenly between rolls. Sprinkle rolls with Old Bay seasoning and top with crushed potato chips.

INGREDIENTS

FOR THE CRUST
  • 2 c. crushed graham crackers
  • 1/2 c. (1 stick) butter, melted
  • 2 tbsp. sugar
  • kosher salt
FOR THE CREAM FILLING
  • 12 oz. cream cheese, room temperature
  • 1/4 c. sugar
  • 8 oz. cool whip
FOR THE FRUIT LAYER
  • 3 bananas, thinly sliced
  • 20 oz. can crushed pineapple, well drained
  • 1 lb. strawberries, finely chopped
ADDITIONAL TOPPINGS
  • 8 oz. cool whip
  • 1/2 c. walnuts, toasted and chopped
  • chocolate syrup, for serving
  • Rainbow sprinkles, for serving
  • Maraschino cherries, for serving

DIRECTIONS

  1. Grease a 9"-x-13” baking dish.
  2. Make crust: In a medium bowl, add graham cracker crumbs, butter, sugar and a pinch of salt. Mix until evenly combined, then press into baking dish. Refrigerate until set, at least 15 minutes.
  3. Make cream filling: In a large bowl, beat cream cheese and sugar until fluffy, 5 minutes. Fold in Cool Whip. Spread mixture evenly onto crust.
  4. To cream layer, add even layers of banana, pineapple and strawberries. Top with Cool Whip and sprinkle with walnuts. Refrigerate at least 4 hours, or up to overnight.
  5. When ready to serve, garnish with chocolate syrup, sprinkles and maraschino cherries.

Summer Panzanella

INGREDIENTS

  • 2 large baguettes, cut into 1-inch cubes
  • 1/2 c. extra-virgin olive oil, divided
  • 3 tbsp. red wine vinegar
  • 1 tsp. honey
  • kosher salt
  • Freshly ground black pepper
  • 1 large, seedless cucumber, roughly chopped
  • 2 pt. cherry tomatoes (preferably multi-colored), halved
  • 1 red onion, chopped
  • 1 clove garlic, minced
  • 1 bunch basil, torn

DIRECTIONS

  1. Pre-heat a large skillet over medium-high heat.
  2. Meanwhile, in a large bowl, toss bread with 1/4 cup olive oil. Add bread to skillet and toast until golden and crisp, about 10 minutes. Drain and set aside to cool.
  3. Make dressing: In a small bowl, whisk together red wine vinegar, remaining 1/4 cup olive oil and honey. Season with salt and pepper.
  4. To large bowl, add crispy bread, cucumber, tomatoes, onion and garlic. Toss with dressing until evenly coated and season with more salt and pepper.
  5. Garnish with basil and serve.

Pineapple Bun Burgers Vertical
TOTAL TIME:

INGREDIENTS

  • 1 lb. ground beef
  • 1 tbsp. Worcestershire sauce
  • kosher salt
  • Freshly ground black pepper
  • 8 pineapple rings
  • 1 large red onion, sliced into rings
  • 4 slices pepper jack
  • 4 pieces romaine
  • 8 slices cooked bacon

DIRECTIONS

  1. Heat grill to medium-high. In a large bowl, combine ground beef and Worcestershire and season with salt and pepper. Form into 4 patties.
  2. Grill patties, pineapple, and red onion until charred, 3 minutes per side. Top burger patties with pepper jack and cover grill to let melt, 1 minute.
  3. Top bottom pineapple buns with lettuce, burger patties, bacon, and grilled onions, then top with pineapple bun.
