Prep Time

30 min

Total Time

Ingredients

  • 6 c. Krispie Rice cereal
  • 5 c. mini marshmallows
  • 2 large spoonfuls (about 1/2 c.) marshmallow fluff
  • 3 Tbsp. butter
  • 1 c. candy corn candies
  • yellow and orange food coloring
  • 1/2 c. each, white, orange and yellow candy melts

Instructions

  1. With non-stick cooking spray, spray the inside of a bundt or tube pan. Set aside.
  2. In a medium microwave safe bowl, melt one Tbsp. butter, add 1c. marshmallows to the melted butter, and stir. Melt the marshmallows for about 30 seconds on medium heat. Add 2 c. cereal to the melted marshmallows and stir well. Add the 2 large spoonfuls of the marshmallow fluff, and stir thoroughly. Lightly spray your hands with non-stick spray. Using your hands, firmly press the white cereal mixture into the bottom of the bundt pan. Add 1/2 cup of the candy corn to the top of the white cereal mixture.
  3. For the second layer, melt another tablespoon of butter in a microwave safe bowl. Add two cups of marshmallows, and stir. Melt on medium power for 30-45 seconds. Stir the melted marshmallows, and add several drops of the orange food coloring. Add 2 cups of cereal and stir thoroughly. Spray hands and firmly press the orange mixture onto the top of the white mixture. Add the remaining 1/2 cup of candy corn to the top of the orange layer.
  4. For the third layer, melt the last tablespoon of butter in a microwave safe bowl. Add two cups of marshmallows, and stir. Melt on medium power for 30-45 seconds. Stir the melted marshmallows, and add several drops of the yellow food coloring. Add 2 cups of cereal and stir thoroughly. Spray hands and firmly press the yellow mixture onto the top of the orange mixture. Let the pan set for a few minutes to cool. Invert the pan onto a plate, and the cake will come right out.
  5. Melt each of the three candy melt colors in their own bowls. (Follow the label on the candy melts for proper melting directions.) Drizzle the cake with each of the candy melts, and let set before serving.

Halloween Monster Apples

Ingredients
  1. 2 green apples, each quartered
  2. almond butter (or hazelnut butter)
  3. 32 sunflower seeds
  4. 2-3 strawberries, sliced
  5. 1-2 googly eyes per apple bite (for the larger eye use a marshmallow)

Instructions
  1. First, cut the middle out of each quarter of the apple in order to create a mouth. Don't worry about it being perfect, as you are filling this gap with almond butter anyway so if you cut too deep, you can always cover it up and you won’t even be able to notice.
  2. Coat the inside of the gap where you just cut with a filling of almond or hazelnut butter.
  3. Place sunflower seeds on the top of where the "mouth" is to resemble the teeth.
  4. Place 1 sliced strawberry inside the mouth to resemble the tongue.
  5. "Glue" each eye above the mouth, using a dab of almond butter to make it stick in place.
  6. Serve your monsters and enjoy!

••••SHRIMP GRILLED CHEESE!!

The recipe is adapted from Hans Rockenwagner’s Das Cookbook.

Shrimp Grilled Cheese
Makes 2 sandwiches

1/2 pound shrimp, peeled and deveined
1 cup grated fontina
1 ounce cream cheese, softened
Pinch of cayenne
Kosher salt, to taste
Unsalted butter, for greasing pan
4 slices bread of choice

In a large sautรฉ pan, heat 1/2 tablespoon butter over medium heat heat. Quickly cook shrimp, for 1-2 minutes on each side before removing from heat, along with pan juices to a bowl. Wipe pan clean. When cool enough to handle, chop shrimp into smaller pieces.

Mix together fontina, cream cheese, cayenne and some salt in a bowl. Add shrimp and juices and stir to combine. Divide half of the shrimp mixture among two slices of bread and top with the remaining slices of bread. Heat some more butter in the sautรฉ pan over medium heat. When foam subsides, lay the two sandwiches side by side in the pan and cook until the cheese begins to look melted and the bread is golden brown. Flip sandwiches and repeat on the other side, adding a bit more butter as you flip to get the same golden brown color on the opposite side. After a another couple minutes, remove sandwiches from heat, slice in half – or don’t slice, I know that’s a personal preference – and serve immediately.
