Ingredients
1 cup Horizon Organic fat-free milk3 large Horizon Organic eggs1 tablespoon Horizon Organic butter, melted and cooledpinch salt2 teaspoons sugar1/2 teaspoon vanilla extract1/4 teaspoon ground cinnamon1 teaspoon finely grated orange zest (optional)6 (1/2-inch-thick) slices day-old French bread or whole wheat Texas Toast
Directions
Coat a standard waffle iron with non-stick cooking spray and preheat. (Note: Do not use a Belgian waffle iron - the chambers are too deep.) If bread is not already day-old, place slices on a baking sheet and bake for 10 minutes at 350 degrees to dry out. In a wide-bottom bowl whisk together milk, eggs, melted butter, salt, sugar, vanilla, cinnamon and orange zest. Dip a slice of bread in egg mixture and soak well. Remove and repeat with another slice. Place bread slices on hot waffle iron. Cook 4 to 5 minutes or until light brown and crisped on top. Repeat procedure with the remaining bread. Serve with fresh fruit or maple syrup.
In a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon and salt. In a separate bowl whisk together the buttermilk, butter, eggs and vanilla. Add liquids to the flour mixture and mix until just combined. Add the chopped apples and mix only until incorporated.
Preheat a waffle iron and cook waffles according to manufacturer's instructions. Let cool and cut into segments.
Pour enough vegetable or canola oil into a heavy bottomed pot so that it's 2 inches deep. Set over medium heat, insert a thermometer, and heat to 360 degrees F.
Working with the waffles in small batches, fry until golden brown, about 1 minute on each side. Use a slotted spoon to remove doughnuts and transfer to a paper towel lined tray to drain.
To make the glaze, whisk together the powdered sugar, milk and vanilla extract. Dip the hot doughnuts into the glaze and let sit on a wire rack for 20 minutes before serving.
