Egg and Potato Sandwiches

MMMMM Good!
Cook time: 20 Min  Prep time: 10 Min  Serves: 4
Ingredients
2 Tbsp extra virgin olive oil
2 tsp extra virgin olive oil
1 medium russet potato, peeled and cut into 1/2-inch cubes
1 large italian frying pepper, (cubanelle) seeded, and thinly sliced
1 medium onion, thinly sliced
kosher salt
6 large eggs
4 c baby arugula
2 tsp red wine vinegar
4 seeded semolina rolls, split and toasted
4 slice sharp provolone cheese
Directions
1. Heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the potato and cook, tossing, until browned and begaining to soften, 4 to 5 minutes. Add the slice pepper and onion and season with salt. Cook, tossing occasionally, until potato is cooked through and the pepper and onion are browned but not completely soft, 8 to 10 minutes.

2. Meanwhile, beat the eggs in a bowl and season with salt. Reduce the heat to low and give the pan a moment to cool. Pour in the eggs and cook, stirring constantly, until jet set, 2 to 3 minutes. Remove from the heat.
3. Toss the arugula with the remaining 2 teaspoons olive oil and the vinegar in a bowl. Season with salt. Fill each roll with the scrambled eggs, cheese, if desired, and the arugula.

    • 1 tsp. lemon juice
    • 8 ounces fresh cooked lobster meat or refrigerated or canned lobster meat, drained, cut into large chunks
    • 2 Boston lettuce leaves
    • 2 New England-style or top-sliced hot dog buns, toasted
    • Method

      • 1Combine Hellmann's® or Best Foods® Real Mayonnaise, tarragon and lemon juice; gently stir in lobster.
      • 2Arrange lettuce in buns, then fill with lobster mixture.

2 tsp. sesame oil
1/2 onion, chopped
3 cloves garlic, minced
1 lb. ground pork (or ground beef)
1/2 c. ketchup
1/2 c. hoisin sauce
2 tbsp. low sodium soy sauce
2 tbsp. brown sugar
1 tbsp. apple cider vinegar
kosher salt
Freshly ground black pepper
1 c. Shredded cabbage
2 tbsp. mayonnaise
Juice of half lime
2 tbsp. sesame seeds
2 Thinly sliced green onions
4 sesame buns
Directions

  1. In a large skillet over medium heat, heat sesame oil until fragrant, about 30 seconds. (Sesame oil can burn quickly, so don't heat it for too long!) Add onions and cook until beginning to turn tender, about 4 minutes, then stir in garlic and cook until fragrant, about 30 seconds. 
  2. Add ground pork, breaking up meat with a wooden spoon, and cook until no longer pink, about 6 minutes. Add ketchup, hoisin, soy sauce, brown sugar, and apple cider vinegar. Season with salt and pepper and bring mixture to a simmer. Cook until mixture thickens, about 5 minutes. Remove from heat. 
  3. In a medium bowl, combine shredded cabbage, mayonnaise and lime juice. Season with salt and pepper. 
  4. Make sandwiches: Top the bottom half of each bun with sloppy joe mixture then sprinkle with green onions and sesame seeds. Top with remaining bun halves.

••••SHRIMP PO’ BOY SLIDERS!!
Ingredients
YIELDS: 12

1/2 c. whole milk
2 eggs
1/2 c. all-purpose flour
1/2 c. finely ground cornmeal
1 tbsp. Cajun seasoning
1 tsp. dried thyme
kosher salt
Freshly ground black pepper
Vegetable oil, for frying
1 lb. shrimp, peeled and deveined, tails removed
12 Slider buns
Shredded iceberg lettuce, for serving
Sliced cherry tomatoes, for serving
FOR REMOULADE:
1 c. mayonnaise
1 tbsp. whole grain mustard
1 tbsp. lemon juice
1 tbsp. Louisiana hot sauce
1 tbsp. parsley, chopped
2 green onions, thinly sliced
Directions
PREP TIME: 0:10
TOTAL TIME: 0:30

  1. In a large bowl, whisk together milk and eggs. In a separate large bowl, whisk together flour, cornmeal, Cajun seasoning and dried thyme. Season with salt and pepper. Dredge shrimp in milk mixture then toss in flour mixture until coated. 
  2. In a large skillet over medium heat, heat about 2" of oil until the oil is shimmering. Fry shrimp until golden, about 2 minutes per side. Drain on a paper towel-lined plate.
  3. Make remoulade: Whisk together mayonnaise, mustard, lemon juice, hot sauce, parsley, and green onions. 
  4. Build sandwiches: Spread remoulade on the bottom slider buns and top with fried shrimp, lettuce, and tomatoes. Top with slider bun tops.

4 slices bacon
4 hot dogs
1/2 c. mayonnaise
4 hot dog buns
1 c. shredded romaine
1 c. Sliced tomatoes
2 tbsp. finely chopped chives
Directions

PREP TIME: 0:10
TOTAL TIME: 0:30

  1. Preheat oven to 425°. Wrap a slice of bacon around each hot dog, securing the ends with toothpicks. Place on a baking sheet and bake until the bacon is crispy, about 20 minutes. 
  2. Spread a bit of mayonnaise onto each hot dog bun, then layer romaine and tomatoes inside. 
  3. Top with bacon-wrapped hot dog, then sprinkle chives on top. 
  4. Serve immediately.
