Pickled Beet Eggs Recipe

Ingredients:

  • 8 hard-boiled eggs, peeled
  • 1 cup canned pickled red beets (with their liquid)
  • 1/2 cup apple cider vinegar
  • 1/2 cup water
  • 3 whole cloves
  • 2-4 cloves garlic
  • 1 bay leaf
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/8 tsp ground allspice

Directions:

  1. Place peeled hard-boiled eggs in a quart-sized mason jar (or any other heatproof container)
  2. Combine remaining ingredients in a saucepan and bring to a boil.  Reduce heat and simmer for 3-5 min.  Pour warm mix over eggs and cover tightly.
  3. Chill for at least 2 days before serving.  Will keep for about 2 weeks in the refrigerator

Crockpot Sweet Potato Sausage Chili

Ingredients
  • 1 can (28 oz) diced tomatoes, undrained
  • 1 can (15 oz) black beans, drained
  • 1 large sweet potato, peeled and diced into 1/2-in cubes
  • 4 sausage links, sliced into 1/2-in slices
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 1 green pepper, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • Sliced avocado, shredded cheese, sour cream, sliced green onions, minced cilantro, ect for topping, optional
Instructions
  1. In a 3-qt crockpot, combine all ingredients through chicken broth. Cook chili on low 4-5 hours, or on high 2-3 hours. Season chili with salt and pepper to taste.
  2. Serve chili warm in serving bowls with desired toppings on top.
