Apple Fritter Waffle Doughnuts


Ingredients:

DOUGHNUTS:

  • 2 cups (240 grams) all-purpose flour
  • 3/4 cup (150 grams) granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 3/4 cup (175 ml) buttermilk
  • 1/4 cup (55 grams) unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups (225 grams) chopped apples, peels removed (from about 2-3 apples)
  • Vegetable or canola oil, for frying

GLAZE:


  • 1 1/2 cups (170 grams) powdered sugar
  • 1/4 cup (60 ml) whole milk
  • 2 teaspoons vanilla extract

Directions:

  1. In a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon and salt. In a separate bowl whisk together the buttermilk, butter, eggs and vanilla. Add liquids to the flour mixture and mix until just combined. Add the chopped apples and mix only until incorporated.
  2. Preheat a waffle iron and cook waffles according to manufacturer's instructions. Let cool and cut into segments.
  3. Pour enough vegetable or canola oil into a heavy bottomed pot so that it's 2 inches deep. Set over medium heat, insert a thermometer, and heat to 360 degrees F.
  4. Working with the waffles in small batches, fry until golden brown, about 1 minute on each side. Use a slotted spoon to remove doughnuts and transfer to a paper towel lined tray to drain.
  5. To make the glaze, whisk together the powdered sugar, milk and vanilla extract. Dip the hot doughnuts into the glaze and let sit on a wire rack for 20 minutes before serving.

ROLLUP BLENDER PANCAKES

••••BACK TO SCHOOL BREAKFAST !!

INGREDIENTS:

  • 1 cup lowfat cottage cheese
  • 6 large eggs
  • 1/2 cup all-purpose or whole wheat flour (about 2 1/2 ounces)
  • 1/4 teaspoon salt
  • 1/4 cup oil (canola, vegetable or coconut oil)
  • 1/4 cup milk
  • 1/2 teaspoon vanilla
  • 2 tablespoons sugar

DIRECTIONS:

  1. Combine all the ingredients in a blender and process until smooth.
  2. Heat a 10-inch nonstick skillet over medium heat until a drop of water sizzles on the surface. Lightly spray with nonstick cooking spray. Lift the skillet from the heat and ladle in about 1/4 cup batter, spinning the skillet in a circle to form a somewhat even circle about 6 or 8-inches across (it doesn’t have to be perfect).
  3. On the heat, cook the pancake until golden, about a minute, then use a wide, flat spatula to carefully flip the pancake and cook for 30 seconds or so on the other side.
  4. Slide the pancake to a plate and repeat with the remaining batter, spraying with cooking spray every few pancakes or so and making sure the skillet is hot before adding a new scoop of batter (although make sure it isn’t so hot that the pancakes burn – adjust the temperature as needed). Stack the pancakes on top of each other as they finish cooking.
  5. Serve with butter, jam, powdered sugar, syrup, fruit and whipped cream – whatever your little heart desires! Spread the filling down the center and roll up to eat.

NOTES:

These pancakes can be cooked, cooled, stacked and sealed in a ziploc bag and refrigerated for a few days (reheat in the microwave or quickly in a warm skillet). They can also be frozen for several months.

Bacon, Egg and Toast CupsAdapted from Martha Stewart
Serves 6 or more


Cooking spray
6 slices white or whole-wheat sandwich bread
1/4 cup butter, melted
6 slices bacon, preferably thick cut
6 large eggs
Coarse salt and fresh ground pepper

Preheat oven to 375o F.  Spray 6 standard muffin cups with cooking spray
With a rolling pin, flatten bread slices slightly and with a 4-1/4″ cookie cutter, cut into eight rounds. (Now, most of us don’t have a cookie cutter that large.  Flatten your bread and place your largest round cutter on the bread and use as a guide to cut that size hole. 4-1/4″ is pretty much what a piece of sandwich bread will measure when flattened. So, you are essentially cutting the largest round you can minus any crust.)  Cut each round in half, then press two halves into each muffin cup, overlapping slightly and making sure bread comes up to edge of cup.  Use extra bread to patch any gaps on bottom or sides.  Brush bread with melted butter.
In a large skillet, cook bacon over medium, until almost crisp (I cooked my bacon in the oven for 6 minutes on 375F.) The bacon will continue to cook in the oven. 

Lay 1 bacon slice in each bread cup and crack an egg over each.  Season with salt and pepper. Place muffin tin on a rimmed cookie sheet to catch any bacon fat.  Bake until egg whites are just set, 20 to 25 minutes.
