••••CUP OF FRENCH TOAST๐๐ณ๐ฅ๐ฅ๐ฎ☕️!!••••
(Source: prettyprudent.com recipe and photos and Jaime and lazyassmeals.com video)
2-Minute French Toast in A Cup
A simple “french toast” in a cup you can make in your microwave.
ingredients
1 or 2 slices of bread, cubed (just fill your cup to overflowing a bit)
1 tbls butter
1 egg
3 tbls milk
Dash cinnamon
Drop of vanilla extract (optional)
instructions
Cube bread.
Melt butter in cup for a few seconds in your microwave. Swoosh it around the cup.
Add bread to the cup.
In a separate cup, combine the egg, milk, cinnamon, and vanilla. Stir.
Pour the liquid over the bread. Smoosh it a little and allow the liquid to soak into the bread.
Microwave. Start with one minute, then add ten seconds at a time until it’s cooked to your liking (no runny eggs). In my microwave that’s 1 minute, 20 seconds.
Add syrup if desired. Eat!

••••FRENCH TOAST STICKS!!
Baked French Toast Sticks
Yield: About 6 servings
Ingredients
2 Tbsp granulated sugar 1 tsp ground cinnamon 1 cup whole milk
4 large eggs
1 tsp vanilla extract
1 pinch salt
8 slices Texas toast bread
2 Tbsp butter , melted, plus more for serving if desired Maple syrup , for serving
Instruction
1. Preheat oven to 350 degrees. Line an 18 by 13-inch baking sheet with parchment paper. In a small bowl whisk together sugar and cinnamon, set aside.
2. In a medium mixing bowl vigorously whisk together milk, eggs, vanilla and salt until very well blended. Cut each slice of bread into even three strips (you can layer a few slices to cut several at a time). Dip each portion (I usually dip 2 sticks at a time) into egg mixture then lift and let excess run off and transfer to prepared baking sheet (they will have to fit closely together but leave just a little space between them).
Using a basting brush, brush tops of french toast sticks lightly with 1 Tbsp of the melted butter. Sprinkle tops evenly with half of the cinnamon sugar mixture. Bake in preheated oven for 13 minutes. Remove from oven, flip french toast sticks to opposite side and brush tops lightly with remaining 1 Tbsp melted butter and sprinkle evenly with remaining cinnamon sugar mixture.
Return to oven and continue to bake until cooked through, about 13 - 18 minutes longer. Let cool for a few minutes. Brush lightly with a little more melted butter if desired and serve warm with maple syrup for dipping.

YIELD: ABOUT 8 SERVINGS
EASY BREAKFAST CASSEROLE WITH SAUSAGE, HASHBROWNS AND EGGS
TOTAL TIME: 45 MINS
PREP TIME: 15 MINS
COOK TIME: 30 MINS
INGREDIENTS:
- 1 pound Italian sausage (I prefer hot, but mild or sweet also work)
- 1 medium white onion, peeled and diced
- 3 cloves garlic, minced
- 1 red bell pepper, cored and diced (or 1 jar of roasted red peppers, drained and diced)
- 6 eggs
- 1/3 cup milk
- 1 (20 ounce) bag frozen hash browns, thawed (I used the cubed kind)
- 2 cups shredded cheddar or mozzarella cheese
- 1/4 teaspoon freshly-ground black pepper
- (optional topping: thinly sliced green onions)
DIRECTIONS:
••••QUICK AND EASY!!
- Heat oven to 375°F.
- Add the sausage to a medium saute pan. Cook over medium-high heat until browned, crumbling the sausage with a spoon as it cooks. Remove sausage with a slotted spoon and transfer to a large mixing bowl. Reserve about 1 tablespoon of sausage grease in the saute pan, discarding the rest. Add the onion and red pepper* to the saute pan, and saute for 5 minutes until cooked. Add the garlic and saute for an additional 2 minutes until fragrant. (If using the jarred roasted red peppers, wait to stir them until after the garlic.) Pour the vegetable mixture into the mixing bowl with the sausage. Add the hash browns and 1 1/2 cups cheese to the mixing bowl with the sausage and veggies. Stir to combine.
- In a separate bowl, whisk together the eggs, milk and black pepper until combined. Then add them to the hashbrown mixture, and stir to combine. Pour the mixture into a 11×7-inch or a 9×9-inch baking dish (a 9×13-inch dish will also work), and top with the remaining 1/2 cup of shredded cheese. Cover with aluminum foil and bake for 30 minutes. Then remove the aluminum foil and bake for an additional 10-15 minutes until the potatoes in the center are cooked through. (I recommend just using a fork to pull out one of the potatoes in the center of the casserole, and test it to see whether it’s tender and cooked through). Remove and let the casserole rest for 5 minutes. Sprinkle with green onions and serve!
*Update: Some of you have reported back that your casserole took closer to 45 minutes (total) to bake, so I’ve updated the recipe instructions accordingly. In general, just keep an eye on the casserole while baking, and once the potatoes are tender, it’s ready to go!
