Soup is a delicious way to clean up your diet while supporting your body’s natural detoxification processes. This soup is hearty and nourishing–filled with vegetables, shiitake mushrooms, and chicken in a delicious flavorful broth.

INGREDIENTS


  • 1 tbsp(s) olive oil

  • 1 medium yellow onion, diced

  • 1 medium carrot, diced

  • 2 stalks celery, chopped

  • 2 cloves garlic, thinly sliced

  • A thumb-size piece of fresh ginger, peeled and minced

  • 4 cup(s) homemade chicken stock

  • 1 medium red bell pepper, ribs and seeds removed, cut in half and thinly sliced

  • 1 cup(s) thinly sliced shiitake mushrooms, caps only (or substitute cremini or white button mushrooms; include the stems and thinly slice)

  • 1 cup(s) chopped purple or green cabbage

    k
  • 1/2 cup(s) chopped broccoli or cauliflower florets

  • 1 tsp(s) sea salt

  • 2 cup(s) cooked chicken (breast or thigh meat),, cubed or shredded

  • 1/8 cup(s) apple cider vinegar or lemon juice

    k
  • 1 tbsp(s) raw honey

    k
  • 1 tsp(s) red chili pepper flakes

DIRECTIONS
  1. Heat the olive oil in a large soup pot over medium heat. Add the onion, carrots, and celery and sauté, stirring frequently, for about 5 minutes, or until the onion is translucent and the vegetables are becoming soft.
  2. Add the garlic and ginger and sauté for another 3-5 minutes until fragrant. Watch carefully and stir frequently so the garlic does not brown.
  3. Add the chicken stock, red bell pepper, mushrooms, cabbage, broccoli or cauliflower, and salt. Reduce the heat to low, partially cover, and let simmer for 15 minutes.
  4. Add the chicken, apple cider vinegar or lemon juice, honey, and the red chili pepper flakes. Stir and let simmer for another 5 minutes. Serve hot.

Ham, Mac & Cheese Soup

A ham and cheese soup for all macaroni and cheese fans!

••••INGREDIENTS••••

1/2 cups uncooked dried small macaroni shells 
2 tablespoons Land O Lakes® Butter 
2 tablespoons all-purpose flour 
1 teaspoon Dijon-style mustard 
1 (14-ounce) can chicken broth 
1/2 cups Land O Lakes® Fat Free Half & Half 
11 (3/4-ounce) slices Land O Lakes® Deli American coarsely chopped 
1 cup finely diced ham 
Salt, as desired 
Pepper, as desired

Tip #1

- Try chopped or sliced hot dogs instead of ham.

How To Make

  1. Cook pasta according to package directions. Drain; set aside.
  2. Melt butter in 3-quart saucepan until sizzling; stir in flour and mustard. Add broth and half & half. Cook over medium-high heat, stirring constantly, 4-5 minutes or until mixture comes to a boil. 
  3. Reduce heat to low; stir in cheese until melted. Stir in cooked macaroni and ham. Cook 4-5 minutes or until heated through. Salt and pepper to taste.

Ingredients
  • 4 tablespoons butter
  • 1 medium onion, diced
  • 1 clove garlic, minced
  • 1 1/2 cups frozen lima beans
  • 1 (14 1/2-ounce) can diced tomatoes
  • 1 (8-ounce) can tomato sauce
  • 3/4 cup BBQ Sauce
  • 1 1/2 to 2 cups chicken broth
  • 1 1/2 cups frozen corn
  • 1/2 teaspoon tabasco sauce
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried thyme
  • 1 1/2 cups diced cooked chicken or turkey
  • 1 pound pulled pork
Instructions
  1. Melt butter in a Dutch oven over medium heat. Add onion and garlic and cook 5 minutes.
  2. Add lima beans and cook 2 minutes.

  3. Add diced tomatoes, tomato sauce, BBQ sauce, and chicken broth. Simmer 15 minutes.
  4. Add corn, seasonings and meats and simmer 5 more minutes.
Recipe Notes
Note: I use Bone Suckin BBQ Sauce for this recipe. It is a fairly thin sauce and the flavor is not as strong as some sauces. If you use a different BBQ sauce you may want to start with about half the amount of BBQ sauce the recipe calls for. You can always add more.
