BACON, EGG & HASH BROWN GRILLED CHEESE SANDWICH

INGREDIENTS:

  • 1 russet potato, peeled
  • 4 slices bacon (thick-sliced works the best)
  • 2 eggs
  • 4 slices white bread
  • 2 tablespoons butter, very soft
  • 6 ounces sharp cheddar cheese, shredded

DIRECTIONS:

  1. Place peeled potato in a small saucepan, cover with cold water and bring to a boil over high heat. Once it reaches a boil, reduce the heat and simmer for 5 minutes. Remove from heat and let sit for 15 minutes.
  2. Meanwhile, fry the bacon in a large (12-inch) cast iron skillet (use stainless steel if you don’t have cast iron) until crisp. Remove from the skillet to a paper-towel lined plate to drain. Pour the bacon drippings from the pan into a small bowl and set aside.
  3. Return the pan to the burner (do not wipe out the pan) over medium heat and fry the eggs to your desired degree of doneness (you can cook them the whole way through, leave the yolk runny, whatever your preference). Remove the eggs to a small plate and cover with foil to keep warm.
  4. Once the potato is cool enough to handle, grate with the large holes of a box grater. Heat your skillet over high heat and then measure the reserved bacon drippings. Add 2 tablespoons to the hot skillet (if you don’t have quite 2 tablespoons, use vegetable or canola oil to make up the difference). Spread the shredded potatoes in a thin, even layer over the bottom of the skillet. Season with salt and pepper and cook for 5 minutes, or until golden brown on the bottom. Don’t try to turn them or move them until the 5 minutes is up! Once brown, use a wide spatula to flip the potatoes over and cook on the other side for 3 to 5 minutes, or until golden brown as well. Once finished, remove the hash browns to a plate.
  5. Reduce the heat to medium-low. Butter all of the slices of bread, making sure to spread the butter over the entire surface of the bread to the edges. Place two pieces butter-side down in the skillet, and then top each slice of bread with a quarter of the cheese, half of the potatoes, one egg, two slices of bacon and the remaining cheese. Top with another slice of bread, buttered side-up. Cook until the bottom is golden brown, then carefully flip the sandwich and continue to cook until golden brown on the other side, about 5 to 7 minutes total. Slice in half and serve!

INGREDIENTS

  • 1 (6- to 8-oz) box macaroni and cheese
  • 2 tbsp. butter (plus more for cooking)
  • 1/4 c. milk
  • 2 c. shredded cheddar cheese, divided
  • 4 slices cooked bacon, chopped
  • 8 slices french bread


DIRECTIONS

  1. In a medium saucepan filled with boiling water, cook macaroni until al dente, about 7-8 minutes. Drain.
  2. Melt 2 tablespoons of butter in the same pot over low heat. Add milk and cheese packet and whisk well. Turn off the heat and return macaroni. Add 1/2 to 1 cup of cheddar and stir until the cheddar is melted and the macaroni is evenly coated in the cheese sauce. Remove from heat. Fold in bacon pieces.
  3. Assemble sandwiches: Butter one side of each piece of bread. For each sandwich, place one slice of bread buttered side down on a clean working surface or plate. Cover bread with cheddar cheese, then spoon macaroni and cheese on top. Sprinkle with more cheddar then top with one more slice of bread, buttered side up. Repeat process with remaining bread. (You may have leftover macaroni and cheese.)
  4. Heat a large nonstick skillet over medium heat. Place 1 to 2 sandwiches (or however many will fit) in the skillet and cook until bread is golden and the cheese is melted, about 3 minutes per side.

TOTAL TIME: 
LEVEL: EASY
YIELD: 1 SANDWICH

INGREDIENTS

  • 12 frozen tater tots, defrosted
  • 1/2 c. shredded Cheddar
  • Cooking spray

DIRECTIONS

  1. Heat large nonstick skillet over medium heat and grease it with cooking spray.
  2. Arrange 6 tater tots in a rectangle, side-by-side, on one side of the skillet. Repeat to make another rectangle with remaining tater tots on the other side of the skillet.
  3. With a large spatula (preferably metal) press down hard on each tater tot rectangle to form a flat square patty. You may need to press down repeatedly to help the tater tots hold together. Cook until the bottom sides of the tater tots begin to crisp, about 3-5 minutes. Sprinkle each square with cheese (this helps everything stay together!) then cover the pan with a tight fitting lid and continue cooking the tater tots until the cheese is melted.

  5. Use a spatula to carefully flip one cheesy square onto the other to form a sandwich. Press down again with the spatula and continue to cook the sandwich until both sides are crispy, about 3 minutes more.

••••BALSAMIC BLUEBERRY GRILLED

Balsamic Blueberry Grilled Cheese Sandwich
2 slices of bread (I used sourdough)
Plenty of white cheese (I used Havarti, but lots of different  cheeses would be good! Mozzarella, Monterey, Swiss, or Sharp White Cheddar would be yummy. I have been meaning to try goat cheese!)
Fresh spinach or arugala 
1/2 cups fresh or frozen blueberries
1 tbs balsamic vinegar
1 1/2 tbs. brown sugar                                        
1. In a small saucepan, combine blueberries, sugar and vinegar. Turn on medium heat and let come to a slow boil. Use a utensil to crush berries as you stir. After boiling for about 5 minutes, pour mixture into a mesh strainer and let the juice syrup separate from the solid berries. Save the syrup for cocktails, pancakes or both!
2. Spread blueberries onto a piece of bread, top with cheese, some spinach, then more cheese! Sprinkle with fresh ground pepper. Top with your other slice of bread and toast. Enjoy!
