  2. All the delicious flavours of Dr Pepper in a pancake - yes, really! By replacing the milk in the traditional pancake batter with the drink you can add even more flavour to the batter. You can detect the taste when the pancakes are plain but they really emerge when you team them with sugar or ice cream. Experiment with your pancakes and try other fizzy drinks or juices. Pancakes are so cheap to make, it doesn't matter if a few don't work.

  7. When making up the pancake mixture replace the 
  1. milk with equal amounts of Dr Pepper. Continue to make the pancakes like usual.

TOTAL TIME: 
Prep: 10 min. + chilling

  • 1 jar (32 ounces) whole dill pickles, undrained
  • 2/3 cup sugar
  • 1 envelope unsweetened Kool-Aid mix, flavor of your choice

  1. Drain pickles, reserving juice. In a small bowl, combine the reserved juice, sugar and Kool-Aid, stirring until sugar is dissolved. Set aside.
  2. Slice pickles; return to jar. Pour juice mixture over pickles. Discard any remaining juice. Cover and refrigerate for 1 week before serving. Store in the refrigerator up to 2 months. Yield: 3 cups. Originally published as Kool-Aid Pickles in Country Woman August/September 2011,

TOTAL TIME: Prep: 15 min. Bake: 35 min.
MAKES:10 servings

Ingredients

  • 1 sheet refrigerated pie pastry
  • 2 large eggs
  • 1 can (14 ounces) sweetened condensed milk
  • 1/4 cup butter, melted 
  • 1 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1 package (14 ounces) sweetened shredded coconut


Directions

  1. Preheat oven to 350°. Unroll pastry sheet into a 9-in. pie plate; flute edge. Refrigerate while preparing filling.
  2. In a large bowl, beat eggs, milk, melted butter, extract and salt until blended. Stir in flour. Reserve 1/2 cup coconut; stir remaining coconut into egg mixture. Transfer to pastry-lined pie plate. Sprinkle with reserved coconut.
  3. Bake on a lower oven rack 35-45 minutes or until golden brown and filling is set. Cool on a wire rack.Yield: 10 servings.
