6 Servings
INGREDIENTS:
1 TB Olive Oil
750g Beef cubes {any cut}
1/3 cup Flour
1 Red Onion, chopped
1 Red Bell Pepper, chopped
1 Green Bell Pepper, chopped
2 t Paprika {Smoked if available}
1/3 cup Tomato Puree
2 cups Beef Stock
DIRECTIONS:
1.) Pre-heat your Slow-Cooker on high.
2.) Heat the Oil in a skillet - cover the Beef with the Flour and brown a batch at a time, in the oil - using a slotted spoon scoop the browned Beef into the Slow-Cooker.
3.) Add the Onion, Bell Peppers, Paprika and Tomato Puree to the same skillet - stir-fry 5 minutes - transfer to the Beef in the Slow Cooker and stir through.
4.) Pour the Beef Stock over, reduce heat to low and cook 3 - 4 hours or until the Beef is tender.
Serve over rice or mashed potatoes.

Serves 6
Ingredients:
- 3 large boneless chicken breast
- Juice of one lemons
- ¼ cup white wine
- ¼ cup olive oil
- 4 cloves garlic, finely minced
- 2 tsps. Parsley
- 2 tsps. Kosher salt
- Cracked black pepper
Cut the chicken breast in half and place in a zipper bag. Mix the remaining ingredients and pour over the chicken. Let marinate for at least 30 minutes up to overnight. I only have 30 minutes tonight, but the longer it goes, the more flavor you will have.
Preheat grill to medium. Place chicken on grill and cook 5 minutes on each side, then check for internal temperature of 165°F, continue to cook and flip every 2 minutes until correct temperature is reached.
Serve with a nice veggie and starch.
