With black olives and homemade ketchup... here's how to make meatloaf - my style!
Serves: 4
Ingredients
- 1 small onion, finely chopped
- 1 celery stalk, finely chopped
- 3 garlic cloves, finely chopped
- 1 carrot, finely chopped
- 1 tbsp tomato paste
- 4 tbsp tomato ketchup
- 2,5 oz (70 g) black olives, chopped
- 1 tbsp butter
- 1 tbsp worcester sauce
- 2½ lbs (1125 g) ground meat
- 2 tbsp fennel seeds
- 1 small egg
- 3 tbsp fresh parsley, chopped
- pepper

Instructions
- Melt the butter and add the chopped garlic.
- Gently cook for 2 minutes. Add the chopped onion, carrot and celery.
- Cook for 4 to 5 minutes until the onions are soft. Season with a little pepper and salt to taste. Take the pan off the heat and let the vegetables cool. Transfer the minced meat to a large bowl and add the chopped black olives and fennel seeds.
- Mix well using your hands. Add the cooled vegetables, a pinch of pepper and salt and the freshly chopped parsley.
- Knead the meat mince well again and add the tomato paste, the worcester sauce and the egg.
- Knead well. Check the seasoning and add extra pepper or salt to taste if necessary. Transfer the mince to a baking dish.
- Cover the top with the tomato ketchup.
- Bake the meatloaf 1 hour in a preheated oven at 392°F (200°C). Cover with some tinfoil if the top starts to blacken. Remove the loaf from the oven and let it rest for 5 minutes in its dish. Slice it up and serve.
