TOTAL TIME: Prep: 25 min. Bake: 15 min.
MAKES:4 servings

Ingredients

  • 2 tablespoons canola oil
  • 4 boneless skinless chicken breast halves (6 ounces each) 
  • 2 tablespoons butter
  • 1/4 cup finely chopped red onion
  • 1 cup barbecue sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 1 cup sliced fresh strawberries
 

Directions

  1. Preheat oven to 350°. In a large ovenproof skillet, heat oil over medium-high heat. Brown chicken on both sides. Remove from pan. In same pan, heat butter over medium-high heat. Add onion; cook and stir 1 minute or until tender.
  2. Stir in barbecue sauce, brown sugar, vinegar and honey. Bring to a boil. Reduce heat; simmer, uncovered, 4-6 minutes or until thickened. Return chicken to pan. Bake 12-15 minutes or until a thermometer reads 165°. Stir in strawberries. Yield: 4 servings.
