To Make Meatloaf

With black olives and homemade ketchup... here's how to make meatloaf - my style!
Serves: 4
Ingredients
  • 1 small onion, finely chopped
  • 1 celery stalk, finely chopped
  • 3 garlic cloves, finely chopped
  • 1 carrot, finely chopped
  • 1 tbsp tomato paste
  • 4 tbsp tomato ketchup
  • 2,5 oz (70 g) black olives, chopped
  • 1 tbsp butter
  • 1 tbsp worcester sauce
  • 2½ lbs (1125 g) ground meat
  • 2 tbsp fennel seeds
  • 1 small egg
  • 3 tbsp fresh parsley, chopped
  • pepper
  • salt
Instructions
  1. Melt the butter and add the chopped garlic.

  3. Gently cook for 2 minutes. Add the chopped onion, carrot and celery.

  5. Cook for 4 to 5 minutes until the onions are soft. Season with a little pepper and salt to taste. Take the pan off the heat and let the vegetables cool. Transfer the minced meat to a large bowl and add the chopped black olives and fennel seeds.

  7. Mix well using your hands. Add the cooled vegetables, a pinch of pepper and salt and the freshly chopped parsley.

  9. Knead the meat mince well again and add the tomato paste, the worcester sauce and the egg.

  11. Knead well. Check the seasoning and add extra pepper or salt to taste if necessary. Transfer the mince to a baking dish.

  13. Cover the top with the tomato ketchup.

  15. Bake the meatloaf 1 hour in a preheated oven at 392°F (200°C). Cover with some tinfoil if the top starts to blacken. Remove the loaf from the oven and let it rest for 5 minutes in its dish. Slice it up and serve.
